The so-called Meseta de Popayán is protected by the Andes mountain range, which helps create uniform climatic and altitude characteristics. The result is a balanced cup profile with floral and caramel notes.

The San Bernardo variety, also known as Pacamara – is a natural mutation of Typica that comes from Guatemala. This variety was first discovered on the El Brito farm. It’s a super rare variety that you can find in Colombia.

Thanks to its wide range of locations, climate, and altitudes, Colombia can meet the coffee demand year-round. The Sugarcane Decaf method is used for caffeine removal, based on the natural compound ethyl acetate derived from sugarcane. This process enhances sweetness and acidity, resulting in fantastic decaf coffee.

The process is relatively straightforward. Coffee beans are soaked in water, and ethyl acetate circulates throughout the coffee tank. Ethyl acetate bonds with caffeine in the beans and extracts it, leaving most of the other aromatic compounds intact. Once the desired caffeine level is reached, any remaining ethyl acetate on the beans is removed through steaming.
