Processing: dry anaerobic fermentation with fresh  strawberries during 48 hours. After that, the beans were washed and  placed with strawberries on raised beds and dried to the ideal moisture content

About the farm

This coffee was grown by Luz Helena Salazar at the farm Maracay. This lot was exposed to a dry anaerobic fermentation of 48 hours. During this fermentation stage strawberry was added. The coffee was then gently washed and placed on raised beds mixed with strawberries below 35ºC until ideal moisture content was achieved. This microlot is 100% Castillo. This variety was developed by Federación Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust.

Luz Helena, the mother of Felipe and Carlos Arcila (the brothers who run Cofinet to export the family’s coffees) has always been an incredible advocate for coffee from an early age. She grew up in Armenia, Quindio, which is part of the coffee triangle in Colombia. (The coffee triangle used to be the highest producing coffee of Colombia 20 years ago).

This lot comes from Finca Maracay, an 8 hectares farm in Armenia. Jairo Arcila, Helena`s husband, purchased Finca Maracay in 2008, and Helena became its administrator.

In addition to cultivating coffee, Jairo and Luz Helena also grow mandarins, oranges and cherimoya on the farm.

Cofinet also represents and supports a large number of Colombian Specialty coffee growers. Besides, they developed 4 women only programs with focus on championing women, who go the extra mile for their coffee production and their community and offer educational events and cuppings.
