The coffee history of the Mauricio Escalon family dates back to the 1800s. And today they are the owners of 10 farms and two processing stations. Maurizio works as an agronomist, station manager and as an export company for Cafescal Specialty Coffee. Maurizio himself decides when to start harvesting berries, how to ferment the grain, mix micro-lots or not.
In the 1990s, his father had a crisis in the coffee industry, so Maurizio began to help him with the family business. Although Maurizio was involved in the design of houses and operations, every day he listened to talk about coffee and was completely versed in this area. He suggested building an additional processing station and focusing more on farms, and Cafescal was born.
Finca Helvetia is located in the community of El Naranjito, municipality of Ataco, about 10 km from the capital of Ayutepeque, with an altitude of 1380 meters above sea level. The plantation area is 35.29 hectares, where coffee trees are grown.
The climate in the Helvetia area in the El Salvador mountains ranges from foggy and humid during the winter season from April to October (19º-33º C) to dry, cool and windy (10º-21º C) during November-March. Helvetia produces an average of 75,000 pounds of green coffee for export.
