Description
The Tabi variety was developed and released by the National Coffee Research Center, Cenicafe, in 2000 as part of Colombia’s efforts to combat coffee leaf rust. It’s a hybrid of Bourbon, Typica, and Timor. It was first planted at Fincamigos in 2018.
One of Tabi’s standout qualities is its resistance to coffee leaf rust, but it also boasts excellent cup quality characteristics, just like its parent varieties, Bourbon and Typica.
The name Tabi means “good” in the Guambiano dialect (an indigenous Colombian tribe).
Harvesting and Processing
Coffee cherries are handpicked, with selection based on size and density. They are then sanitized with ozonated water and treated with ultraviolet sterilization. Next, the coffee is immersed in water at a temperature of 90 °C to highlight the sweetness of the cherries.
The cherries undergo anaerobic fermentation for 62 hours in bioreactors with a pressure relief valve at a temperature of 20 °C (with the addition of Saflager S-23 yeast). Finally, they are dried for 88 hours at 40 °C.
The result is a rich, almost perfumed flavor and aroma profile with bright notes of strawberry, sweet cream, blackberry, currant, and tropical lychee.
